Another Weekend Done

This morning we made cornmeal blueberry pancakes. They were delicious! Anything with blueberries in it is alright by me. And Ingrid.

We had a low key day today. A lot of playing and coloring (as usual) and a walk out in the rain. Ingrid was sopping wet after splashing in the "puddles" which were really small lakes. That girl loves her some puddle splashing!


Dinner was tuna casserole, which Ingrid had fun helping make. She didn't understand the idea of stirring and NOT putting it in her mouth though, so I have a feeling a couple frozen peas managed to find their way into her belly. We also made fried eggplant--YUM! I've never cooked eggplant and I didn't really know what to do with it, but allrecipes.com came in handy once again, and I found a simple bread crumb/milk/fry it up recipe that tasted amazing. I heated up some marinara sauce and dug in. We cut the eggplant in circles, and after they were breaded and cooked Ingrid thought they looked like cookies. She grabbed one and just started scarfing it down. I love that she eats anything and everything!
And one more pair of baby shoes were made last night. I used felt as the bottom, which is both more durable and easier to sew than light cotton. And I have tons of different colors so I should be able to come up with some cute combos.

And now it's night time, Ingrid is passed out in our bed, and I may just go join her soon.

Those baby shoes are so cute. We like eggplant grilled. You slice it up season it a little and stick on the grill. Of course, that is a little more of a summer recipe unless you have a george foreman, but it's yummy.

I'm loving the baby shoes, great idea to put felt on the bottom, too.
